    Our Recipes

    Colonial Innkeeper’s Pie

    ·1 cup sugar
    ·3/4 cup warm water
    ·1/2 cup cocoa
    ·1/2 square semi-sweet baking chocolate
    ·1 tablespoon margarine
    ·2 cups sugar
    ·1/4 cup margarine
    ·1/4 cup Crisco
    ·2 eggs
    ·1 cup milk
    ·1 teaspoon vanilla
    ·2 cups flour
    ·1 teaspoon baking powder
    ·dash of salt
    ·2 unbaked 8" pie shells

    Bottom: In a double boiler, combine sugar, warm water, cocoa, chocolate and margarine until melted. Let cool.
    Top: Combine sugar, margarine and Crisco. Beat in eggs, milk, vanilla, flour, baking powder and salt until smooth.
    Divide cooled chocolate between both pie shells. Spoon 1/2 of the top batter over the chocolate layer working from the outside in.
    Bake at 350 degrees for 30-40 minutes.

    Broccoli and Bacon Quiche

    ·1 unbaked piecrust
    ·Cooked broccoli
    ·1/2 c. light mayo
    ·2 T. flour
    ·2 eggs
    ·1/2 c. milk or cream
    ·2 c. “Kraft” 3 cheeses (Romano, parmesan, & asaggio)
    ·1/3 c. chopped spring onions
    ·4 slices of bacon cooked and crumbled

    Layer broccoli on bottom of piecrust. Combine all ingredients, except bacon and pour into crust. Top with crumbled bacon. Bake @ 350 degrees for 45 minutes to 1 hour.
    ** Note: You can vary the ingredients as desired. Other great combinations include adding fresh or canned crab, chunks of ham, or excluding all meat for vegetarians.

    Carmel French Toast

    1 cup packed light brown sugar
    1/2 cup butter
    2 tbsp. Light corn syrup
    1 loaf French bread, cut into 3/4 inch slices, estimate 2 per person
    5 eggs
    1 1/2 cups milk
    1 tbsp. Vanilla extract
    Cinnamon sugar

    In a medium saucepan over medium-low heat, mix and melt brown sugar, butter and corn syrup. Meanwhile spray a 9x13-baking dish with nonstick vegetable oil. Pour the butter and sugar mixture into the baking dish. Whisk together eggs, milk and vanilla. Arrange bread slices in baking dish. Pour egg mixture over bread slices, not missing any areas, and using all of the mixture. The bread slices will absorb the excess. Sprinkle cinnamon sugar mixture over bread slices.
    Cover the baking dish and refrigerate overnight. The next morning, preheat oven to 350 degrees. Uncover the baking dish and bake for 45 minutes to 1 hour. Serve directly from the baking dish, inverting slices onto plates. Yield: about 8 servings.
